Schuylkill County Bleenies


  • 4 Potatoes
  • 2 Eggs
  • 1 Onion
  • 2-3 Tbsp Flour depends on how wet the mixture is
  • Oil for frying


  • Peel, wash, and chop potatoes, peel and chop onion. Grate with either a cheese greater, or in a food processor and press grated mixture into a strainer to get rid of excess moisture.
  • Add grated mixture to a bowl and add eggs and flour, and stir.
  • Heat oil in pan on medium high heat. You will know its ready when a toothpick is placed in the oil and the oil sizzles.
  • Use a soup spoon (the larger one) to scoop heaping spoonfuls out of the mix and into the oil, press down to flatten with a ladle or serving spoon.
  • Fry for about 2-3 minutes on each side until browned. Time will vary depending on size of bleenie and oil temperature.
  • Remove from oil and add to paper towel lined plate, season with salt.
  • Serve with topping of your choice.
