Peel, wash, and chop potatoes, peel and chop onion. Grate with either a cheese greater, or in a food processor and press grated mixture into a strainer to get rid of excess moisture.
Add grated mixture to a bowl and add eggs and flour, and stir.
Heat oil in pan on medium high heat. You will know its ready when a toothpick is placed in the oil and the oil sizzles.
Use a soup spoon (the larger one) to scoop heaping spoonfuls out of the mix and into the oil, press down to flatten with a ladle or serving spoon.
Fry for about 2-3 minutes on each side until browned. Time will vary depending on size of bleenie and oil temperature.
Remove from oil and add to paper towel lined plate, season with salt.
Serve with topping of your choice.
